I just posted the recipe to make Mexican Chorizo|Homemade. Don’t know if you are wonder, and what I am gonna cook with the chorizo? well, here is one of the most easy, traditional, tasty recipe using chorizo, Chorizo con Papas which means chorizo with Potatoes.
La Receta – The Recipe: Mexican Chorizo + Papas – Chorizo + Potatoes
Serves: 4 portions
Prep. Time: 30 min.
1 tsp Olive Oil
200 – 250 grams Mexican Chorizo
1/2 chopped Onion
1 small garlic (minced)
3 medium Potatoes, cut in small cubes. (yellow, white or red)
Pinch of Cumin
Salt and Pepper to taste
1. Using a Medium skillet on high heat sauté the Mexican Chorizo for about 5 – 7 min, place in a bowl and set aside.
2. In the same skillet on a medium heat, add a teaspoon of olive oil (or any oil of your taste) add chopped onion, mince garlic and potatoes (cut in small cubes), stir constantly and cook for about 10 min or until potatoes are soft (if you think potatoes are way too hard, add 1/4 cup of water and cook on high-medium heat for another 10 min) add the cumin and stir.
3. Add the cooked Mexican Chorizo back into the skillet, stir – mix all together and check salt and pepper.
NOTE: You can add eggs!! to make Huevo con Chorizo y Papas – Eggs with chorizo and Potatoes; up to you.
How do you serve Mexican Chorizo con Papas? Well… I love it in tacos, gorditas and lonches, (the last one with eggs, yum yum just scrumptious)
